70% of the time 3rd pops into neutral or at higher RPMs it goes right into 4th....new clutch plates or spring adjustment?

Sounds like you need to replace the clutch plates and friction plates to me. I had a similar ishue before I replaced mine. I also had a friend that added normal automotive oil to his bike and that caused his clutch to slip when it was over 3,000 rps. And we had to replace his plates.

Have to agree with jay760
Test it out, carefully changing into 3rd gear, if it is just like putting it into neutral, its most likely the dogs on 5th gear.
I had the same problem, drain your oil & check for any dogs in the oil. Here's what I found :(

The dog in the picture didn't just flow out with the old oil, I had to search with my finger in the bottom of the crankcase thro the sump drain plug hole to find it. Only found one, even after splitting the cases, so I'm guessing the other 2 went while with a PO
Hopefully your problem may be something else but I can see no reason why a worn or badly adjusted clutch would only affect 3rd gear :(
Anyone else got any ideas

Could be the shift shaft is out of adjustment. Page 80 in the Clymer book.
