Getting my forks refurbed. Taken off the caliper and disk but cant get this bit off... how do i remove it, anyone know?

If you mean the bearing in the center, it's probably a press fit in the carrier and would need to be driven out. If you're going to replace the bearing, I would suggest getting one with rubber seals, not an open style like what you have there.
 
How do i drive it out. I basically need to get the disk rotor off the fork so i can get them refurbed/rechromed
 
There is a jam nut on the "outside" of the fork tube on the 1972 (only)
