21 in rim advice

I am doing a 21 inch rim conversion to my existing hub, and have found that older dirt bike wheels to be the easiest option. Though most of the widths were around 1.60, so I was wondering what would be about the widest tire capable of going on a rim of that width?

Also, could someone tell me the width of a stock front xs650 rim, for a comparison. It has spokes if that makes a difference.

stock front is 1.85, so pretty much all normal size front tires will work.

Ahh just go 23" and call it a day since you're respoking it and all.
