706cc rebuild help

So im putting together my brand new 706cc kit for my 79 xs650 ive done sum dighing and cant find a satisfactory answer now small engines r sum wat new to me i think retired gentlemen said he uses permatex aviation gasket seal but it never really sets hard i also have permatex indian head head gasket shellac i want to do this right the first time any help on witch to use and possible why would be great . I like to no the mechanics of why something is or isnt the proper tool for the job because knowledge is for ever

I use threebond/yamabond (the grey one) for most things metal to metal (like crank case halves), permatex copper for head gaskets and I think it is permatex blue (runny blue one) for oil seals etc.
 
C on my race cars n stuff ill use permatex ultra copper for metal on metal n head gasket n the black oil resultant for oil passages but i dont wanna tear up a brand new motor n stuff
