Y'all call this BBQ? LOL...Y'all aint had real Q till you have had Downeastern style NC Q...the flavor of the pork is accentuated by the wood smoke..Hickory wood at that..if you dont smell the smoke dont bother...all that red sauce stuff hides the true flavor of the meat...All downeastern style places have their own variation of spicy vinegar sauces that really bring out the favor of the the meat...well at least ya got the title of the thread correct...LOL;)

I sense a Meat War comin' on....;)

As for myself, I do like the red spicy sauces, but I get it "on the side", so I can have some of the smoked meat bare-naked.
All the better places down here do that..sauces you add to your taste but not already smothered on there when you get it...
Oh and we got...HUSHPUPPIES to die for!!!

ground up potatoes rolled into a ball and deep fried. first cousin to french fries. half brother to hash browns. hushpuppies are also called tater tots I think

i don't know. there seems to be some confusion about hushpuppies vs tater tots and the latter obviiusly must be primarialy tater. but yes, i know the thing you're talking about that tastes like mexican cornbread balls
