I have a '80 engine with stock ignition, K&N filters and a Kerker 2 -> 1 exhaust, should I be using stock jets or increase the jet size?

Most likely you'll have to increase for the more free flowing intake and exhaust. Exactly what is hard to say, every bike is different. Read the carb guide Carb Guides
