A lot of you guys are American, I deliberately avoided "yanks" because it might offend some of you.
I understand that some demographic elements within the US of A make our snowflakes look tolerant and robust.
I need help and it might be that an easily offended American would not offer theirs if I make an idiomatic error.
I may have just done that, sorry, I meant to say "I need y'all onside".
As I have mentioned elsewhere my wife died without warning a little while ago leaving me with her dog.
I can deal with all of that but I have a real problem.
I cannot find her recipe for Chilli Powder and now the can is only 1/4 full.
Research has shown me that Chile Powder is the powder made from Chile peppers or their seeds and that Chilli Powder is a mixture of Chile Powder with other elements or ingredients that soften the harsh edges of Chile.
So, please, if any of you have good recipes for Chilli Powder I need to hear from you and soon because I love Chilli, everything from Texas Red, with diced steak, to your basic mince and red bean and the can is emptying fast.
Please help an old man live a life that includes good chilli, who knows it may help others if you share with me.

AFAIK, chili powder is chili powder if you buy it. Otherwise, you gather various chili peppers and pulverize them. Experiment with the different fruits until it’s close enough to your liking.

It has links to make everything that came in a package. I avoid packaged ingredients myself. I also don’t eat beans, so I’m sure you can add them to this recipe.
 
I think what your wife made was a homemade chili MIX, that may have it included chili powder, onion powder, garlic powder, cumin, etc. Just a guess mate.
 
Bill, I second what drgonzo is telling you... I never buy chili mix, always make my own. I couldn't give you a "recipe", but I can tell you how I do it.
When you buy "chile powder", you are generally buying cayenne, unless it is specifically labelled otherwise, such as chipotle chile powder. To my taste, straight cayenne as a base for chili mix is too hot, so I use paprika as a base. I personally would not use powdered onion and garlic, preferring to use fresh onion/garlic while cooking the meat/beans.
Try 3 or 4 parts paprika or smoked paprika / 2 parts cumin / 1 part chile powder / 1 part chipotle powder (if you can find it) / one part oregano. Tune to taste from there.

DISCLAIMER: there are as many chili recipes as there are chili cooks. It would be highly imprudent for any one of them, me included, to claim authoritatively that any one recipe is better than any other.
 
I thank you all for your thoughts and assistance, I do not see any downside to trying the suggestions on this thread as it means eating more chilli.
Just because I enjoy her recipe does not mean its the best and I am happy to try others now that its the only way forward.
I cook a limited range of food and don't pretend to any talent or expertise, with the exception of Pizza which I have been making for about 55 years.
My mother wouldn't make it and my wife didn't mind a day off from cooking, as it was her job, and the kids made it disappear.
I do a reasonable burger, as one of several recipes, most favourite includes a little dried apple which absorbs some of the fat during cooking and becomes really tasty.
I will work around your tips and try different mixes, who knows if I hit on a good one I will share with you.
The keto thing looks interesting but I didn't get to 280lbs without loving carbs.

I did some reading and there is a view that mobilising fat cells by ketosis may have some role to play in pre-diabetic and type 2 if on real time monitoring. Standard treatment would pump up glucose levels and prevent ketosis so I might change my mind later.

There is a ton of information out there and much of it is conflicting. I made my choice, and it is working for me. My blood work looks better than ever. I got a CAC score last year and it's 25, up from 15 almost 25 years ago. I intend to keep working to stay the course.

Keto chili is just as awesome as any chili. I like mine made with chunks of pork. Truthfully, my wife is away, so I cook for myself. That means I eat meat and little else. It's easy and far healthier than eating in any restaurant, IMHO.
 
For those who tend to natural ingredients, I have made chillis from scratch that win contests. (Small fun fundraising Chilli Cook-offs) This is a chilli that does not have a "bite" but has a wonderfull "Pepper" flavor
3 or 4 jalepeno peppers
3 or 4 habenero peppers
3 Pablano peppers
3 Bell peppers
3 Bananna peppers
3 Anahiem peppers
20 roma tomatoes
3 White onions
4-6 cloves of garlic
Fresh ground black pepper
Optional-1 lb Navy beans (soak beans over night, rinse and drain)
3 lbs pork loin or roast or steak
3-4 cup chicken broth (boil a cut up chicken, use the meat for salad or whatever)
Dice the onions
Clean all of the seeds from the peppers, dice and sautee them with onions.
Cut the pork into 1/2-3/4' bits and brown them leaving some pink
Blanch, peel and cut the tomatoes into 1' chunks.
Combine all adding beans to taste into a large pot adding some broth and slow simmer.
Add black pepper to taste.
I simmer and stir for several hours.

Mr Werner’s chili is keto if you leave the beans out and don’t eat it with cornbread. Even with a few beans it’s low carb.
 
Regarding the peppers. My grocer sometimes has a full selection of peppers, sometimes only 4 or 5. I just make do. Like all chili makers, I like mine and I like others. A friend hosts an annual chili party for his sailing friends and crew. He make 4 excellent and each different, chilis for his party. I will bring fresh cornbread.

I'll have to go to Memphis to have any hope of finding that stuff.
Are Jalepenos and Habeneros not available local? You need those for a little heat, the others are much cooler but add some flavor. I might try Bell, Jalepeno and Habenero in a small batch. I like to think this kind of chili could be done almost anywhere with just natural ingredients. I am not the natural food kind of guy but camping, RV life, boating, simple is better.
