Idle dropping / engine stalling at red lights

I have a 78 XS650, when I start it up I'll engage the choke and screw in the idle screw a quarter to half or so in, then disengage the choke after a few seconds and gradually screw out the idle screw in a mile or two as the bike warms up to get to around 1100-1200. On shorter rides there's no problem at all, but when I'm riding for more than 30 minutes or so, when I'm stopped at a red light, occasionally the engine will seem to lag/drop down to 700/800 rpm for a second or so and then pop back up to 1100. Sometimes it'll even drop down to the point where I have to give a little throttle to keep it from stalling. I'll sometimes turn the idle screw back up a little bit but then I can feel the RPMs are a bit high in first and second gear and I know that isn't the optimal way to fix this.

Does anyone know what could be causing this? It's particularly tricky to diagnose since this only seems to happen after the engine's been going for 30 minutes or so. Would appreciate any help or if anyone else's bike has acted similarly in the past.
