Tuning BS34's and weird idle O2 readings

Ok guys I went through some things on my fresh rephased engine today. Retorqued head and case bolts now that I've had a few heat cycles and 2 rides of 10-12 miles each at varying speeds with part throttle. Vhecked valve lash (.003 intske/.006 exhaust). I also did a quick compression test cold with 8 kicks per side. Old compression gauge only showed about 115psi but it was on both sides with the throttle closed and engine stone cold. The fact that they were even makes me think it's probably ok.
Anyway....I made a test pipe today that goes in place of one of my fishtails and was going to dial in the idle mixtures. The sensor is pretty far down stream but has 2 ft of pipe after it to prevent sucking fresh air. I'm getting a crazy rich AFR reading of like 12.5 unless I bring the mixture screw all the way in to only 1/4 turn out. Idle speed also seems to rise up until the mixture screw basically seats itself.
Carbs are BS34s with Keyster rebuild kits. Plastic floats set to 22mm. Has the stock size 42.5 idle jet with fresh rubber plugs. Using number drill bits I've confirmed the passage matches my original 42.5 as well. I have the 138 mains in it and whatever the middle sized needle was, set to the middle clip location.
During my rides I had the mixture screws about 2 turns out and the plugs looked what I would call slightly rich. Rings had some soot but porcelain just a bit darker than tan to black in 1 spot. Definitely not fouling plugs so I can't imagine my idle AFR is really that rich. Also doesn't smell rich but I seem to get lots of water vapor from my exhaust. I thought that was due to the big spring temp swings we've been having plus lots of rain and my extremely long pipes.
When I rode the bike I'd say the bottom end felt a little sluggish but as it got up in the RPM's it seemed happy. Ignition is the Pandemonium electronic setup for the rephase and ignition timing should be correct.
Between rain and Mother's Day I won't get to ride it again until Monday. Curious to see what the AFR gauge reads under actual load. Any thoughts though? What if God forbid my cam timing was off a tooth....could that cause this. When I installed my chain I went back and forth between 2 teeth until I had myself convinced I was on the correct one.
 
I doublechecked my new pilot screws against the originals tonight quick and except for the pointed tip on the end they are basically identical. Length and diameters of the tapered portion are the same.

Is it possible I went too big with the needle and it's drawing fuel through the main at idle? I may drop it a size Monday as a test.
