Hard to say. I know I'm still on the good side by a fair bit. Just seat of the pants... maybe 1000lbs out and 500lbs gained back so far...
The company that originally modded it put a sticker in the drivers door with the all up empty weight . I'll prolly run it across some scales when I'm done and see how I did.

I call this simply the kitchenette. It's a box all the water tanks will sit in as well as a sink and single burner (electric) cooktop. Once again as I'm want to do, pics kinda fell by the wayside.
The two sides to the box. Weight is a driver here.... made from 1/4" ply and 1X3" boards
The base. Made from 1X6" boards and half inch ply... with the sides glued in place.
I set it in the van and immediately figured my math was off. It stuck out into the doorway further than I planned... fuck me.
Rather than start over, I cut 2" out of the center, added doubler's underneath and glued it back together.
That's better...
1/4" ply started up the back. Anyone notice the other big oops I made?
Test fit.
And here's the sink and cooktop that arrived a few days ago.

Lookin good Jim! That cooktop is interesting , I figured you’d be going gas. Is that 12 volt? Or is it generator powered?

115V, 15A max draw. It'll run off plug in shore power. Future plans include a deep cycle battery bank and 2500W inverter. The battery bank will recharge from the alternator or shore power connection. Solar on top eventually to keep the batt bank topped off.
I thought long and hard about gas cooking, but then you need a big assed propane tank... and more stuff to tend after. I'm gonna eventually include a Coleman kerosene camping stove so I have (cooking) options...

That would protrude into the space for the water tanks. I'll remove the door card and get rid of the cup holder. Need to go inside the door anyway to add insulation and sound deadening foam. Think I have a matching speaker and grill... I'll add that in place of the cup holder.
What are you going to use for a counter top?
There'll be a 1X2' foldout extension on the right side and a cover that'll go over the sink for a cuttin' board.
Just ask because I`ve got a shit ton of Formica I can`t seem to get rid of. If you ever need some for a work bench top just come and get all you want. I`ve probably got 60+ sheets. Some is 16' long.
Wife want's pearl white on the top. got any pearl white formica?
I`ll look tomorrow. I know there`s white marble and such.
