Here is a PDF, (quality not the best(, on the Hitachi Carbs. I think the jets are push in and remember reading they can be removed by cutting away a bit of the tower to b able to get a purchase on the jet to remove it. Wouldn't go to deep.
The carb T has o'rings each end. Wouldn't b hard to get fuel resistant replacements.

2 things come to mind on the fuel leak. 1st could b a stuck float or float needle has some dirt on the seat.
2nd could b leaking petcock in conjunction with float or dirty needle seat
If fuel has been running out the carb it will pay to check it hasn't run into the engine. Check the oil for fuel contamination..
