Hello

I've got a set of 75 dished rims. Can I lace the front one to a newer hub and use a 35 mm front end? I'd like to know before ordering spokes for these.

You don't need to change hubs to use 35mm forks, use the "new style" or aftermarket brake rotors on your hub, done.
Front spoke hubs 73-81 all interchange.

This Yamaha 341-25111-01-00 HUB,FRONT is used on these models and components:

1972 XS2 FRONT WHEEL (XS2) uh, not so much!
1973 TX650 FRONT WHEEL TX650
1973 TX750 FRONT WHEEL
1974 TX650A FRONT WHEEL TX650A - XS650B - C
1974 TX750A FRONT WHEEL
1975 XS650B FRONT WHEEL TX650A - XS650B - C
1977 XS650D FRONT WHEEL XS650D - E - E006501- - F
1979 XS650_2F FRONT WHEEL
1980 XS650G FRONT WHEEL
1981 XS650H FRONT WHEEL
Brand new hubs are available from the dealers!

+1 as gggGary says on the hubs. There is a guy in Australia getting the front hub re manufactured. Not a bad price either

Rims from 74TXA-79F Standards are all the same front 19" and back 18"

All the hubs have a cover on one side that blanks off the mounting holes for an extra rotor on the dual disk set up. 74-76 had a chrome cover and 77-79 had a plastic cover.

Check out the different models here

Pics of a 75B 34mm forks and 77D 35mm forks. Same hub different rotors to correspond with the change in forks.

I sure hope you don't plan any motor work, my God, no offense but you're clueless as far as 650s go.----- AND THERE'S NO EXCUSE FOR THIS !!!!!

Everything pretty much ever known about this bike is on-line and available. Granted, you're not expected to know the intimate details about tuning for mods, but ...... stock stuff
