Has anyone had any experience running without an air filter?
I am using open velocity stacks and can't get my XS to idle very well. It pops a lot at idle and seems a bit sluggish on the move.
I am pretty patient and can normally get there in the end but not with this one so thought it may be the open stacks.

sounds like maybe your idle mix screws might need adjusting. tried the dead cylinder method?

Can you do that with pamco electronic ignition.
I thought pulling off a plug cap wasn't good for the pamco.
I presume I will have to shut the fuel to one carb to do it.

As a rule CV carbs need some intake restriction to work properly.
Pull the cap put a grounded spark plug in it.

yes you have to ground the plug to the engine or you could damage your ignition.
Another way is to pull the caps, or if your model has vacuum petcocks, the lines that come off the intake barbs. It creates a lean mixture that kills that cylinder. By killing, I mean wont fire. If it does keep fireing randomly, lower the idle till it dies. I prefer the grounded plug on the fins for this though.
