Obviously I am having some clutch troubles,

Currently I have my bike up on the table with the back wheel off the ground.

When I pull the clutch lever in completely and put it into first gear it engages straight away and the back wheel turns at idle speed.

No matter what I seem to do with the clutch adjustment on the handle bars and on the engine this doesn't change.

I have been reading past posts about clutch problems and have taken the cover off multiple times to compare to photos and coments,

I haven't lost the ball between the adjustment screw and rod, the rod is the right way around and the arm is in the correct position.

Is the back wheel turning because the bike weight isn't on to stop it from turning?

Any help would be appreciated!

There will always be some drag through the clutch, even when engaged the wheel will spin if off the ground. I would reset it again as per Yamaha specs & then go from there.

Yes, it's normal for the wheel to spin like that for the reasons given. Just make sure you can stop it easily by hand or you really do have clutch problems.
