I built that homemade manometer and adjusted everything ever so slightly.

I can not belive that since I've adjusted my idle, how much quicker the bike is. It is crazy. I have adjusted my idle to around 1200 to 1400 ish, is that proper setting for a 1981 Yamaha XS650 Special?

1200 is standard idle rpm per the manual. Typically idle is given in a 100 rpm band on carb equipped bikes. I'd take 1150-1250. I lean toward the upper side for oil distribution, but if the idle is too high it can make starting hard and affect your compression braking. Too high and it acts like a dang 2-stroke when you close the throttle. Should be able to adjust it pretty precisely if you have the timing, valve clearance, and synch all good to go.
