I have a 71 xs650 hardtail. It has two throttle cables, one to each carb.. Is there a kit or any info on how to link the carbs and convert to single pull? Pros and cons to both? My throttle feels kind of gritty at the bars, but smooth at the carbs. Any help appreciated!

You could install '76 or newer carbs. They are linked and use one cable. I think that will work with your current twist grip but if not, you can change that as well to a later one. I'm not aware of any way to make your current set-up into a single cable deal short of making up a custom 2-1 cable.

If your twist grip is gritty, take it apart, clean, and grease all the components. Put grease on the handlebar too in the area the throttle tube turns against.
