First off, the charts aren't equivalent (one calibrated in road speed and one in engine rpm's). If the run with your cafe was done in 5th, the motor was probably not at peak power by 120 kph; but I don't know how you're geared. The blip in the torque line can be dismissed as a glitch. The run on your 750, calibrated in engine rpm, terminates at 4800 rpm--way below peak power for your engine, so it doesn't mean much. A stocker in good tune can be expected to put out around 38 hp at the wheel at peak power and you're past that number toward the middle of your rpm range; you can't read more into it than that.
