I am new with the xs650's so please bear with me. Can you use any year carbs with the corresponding carb holders on any xs650?

Well, yes, you can, but the earlier the carb set, the more I would stay away from it. The carbs were refined and got better as the years went on. Up until '75, they were separate carbs and used 2 throttle cables. '76-on were bolted together as a bank and used only one cable. If you have a choice, use '76 or newer ones.
