Uncle Will's Ultimate Cornbread
1 cup self rising yellow corn meal
1/2 cup self rising white flour
1 1/4 cup milk or buttermilk
1 egg
1 tbsp. melted bacon grease
Preheat oven and 8 in. cast iron skillet to 450F. Combine flour and meal in mixing bowl. In a separate container, beat egg, stir in milk, and put in microwave until warm. Add to flour and meal. Add warmed bacon grease and mix thoroughly. Coat bottom and sides of preheated skillet with lard. Pour in batter and bake for 30 minutes. Serves 1, maybe 2 if the other person is fast.
