Where To Find a Cafe Seat?

I have seen a TON of cool looking cafe racer pics on this site, and have a question - where are you getting the various seats for your cafe projects? My son and I have started our cafe project and are trying to find the right seat. Are most of you having custom made seats built for your projects? Can a cafe seat be built using the stock seat pan from our '80 Xs?
