I was curious to what specific products I can use to coat my gordon scott pipes before I wrap them with DEI Titanium exhaust wrap?

since yours is raw steel, you should use the vht as suggested by sn34ky.
or get them ceramic coated at a shop.
Header wrap tends to hold on to dirt and water. Its not such a big deal on bikes, as most of us prefer not to ride in the rain.
On cars though, headers will rot in no time. usually only race cars get wrapped.

why even bother? exhaust pipes corrode from the inside-out.

most I've seen corrode at the initial bend after the flange, you can get the inside coated pretty well with a rattle can of vht header paint and it buys you more time. not that they wont corrode, but I think it helps them last longer.
