Bob or not to Bob? Dam*it!

You should never chop up that museum piece with it's sofa sized seat, sun sized taillight and wiring harness from hell inside the headlight just to make something that you really want and looks cool, but that's just my opinion.
 
Do what you want. I say keep it stock. If you come across a bike that's already too messed up by the previous owner or its stock parts are too far gone for an economical restore, then chop it.
 
How much do you got into it?
Maybe someone here is willing to trade?

Ultimately, it is YOUR bike, but being you have presented your dilemma, you are demonstrating that you recognize at the very least that it would make someone happy in its current state and might be suited better with someone else.

You asked so you apreciate the bike for what it is.
Buy some parts, tank, sidecovers and a couple of old guards (keep the origional's), then convert your bike to how you want it to look without desrtroying anything, When/if you sell it or just for fun you can put it back to an XSB.

A few simple things and the bike is converted into a different look. lowering the front light and gauges, a flat seat, lower handlebars, cut the guards, (the new old ones). Some pics of a few different things that can be done to create a new look.

If you like what you have done you can get another junker and use the parts you have for it and then restore the XSB
