I want to get a set of drag bars, and align six of these switches on my bars. (Start/Kill,turn signals x2,hi/lo lights)

I'll just run the hand grips, bolt on speedo, and then six of these, tapped into the bars and running the wiring through. I'm very basic with bike wiring yet though, would this be pretty in depth the try to add to the stock wiring setup of a 1980 650 special?

I was thinking, if it were accessible and possible to cut and splice the individual wires from the stock signaling devices into these buttons. Would this work?

How long are your thumbs that you'll be able to reach all those buttons?

I'm guessing that's a momentary switch, which means it's only going to be a drop in replacement for your horn or starter button. You're going to have to use relays to control the rest and, for someone who is a novice at wiring, that will get pretty complicated pretty quickly. Not impossible, though. Get to reading on what a momentary switch is, a relay, etc. You'll need to know to get this going.

In short: There's no way those will simply splice into your stock wiring harness and "Just work"
