The smallest brake cylinder hone available at all the auto places in my neighborhood is 11/16". Will this work on an OEM MC on a XS650B? When I measure the cylinder bore it looks close to 1/2"to me.

I thought the MC bore on your '75 was a bit larger because it's moving 2 pistons, more like 5/8" or 16mm, but I could be wrong. This place has just about any size you'd need .....

The master cylinder on my '74 is 16 mm.
On my 75 the M/C is marked 5/8. 5/8=16 mm.
