If I have a bike running a TCI ignition currently and wanted to replace the engine with a points engine, is it just a matter of replacing the stator and rotor and everything? Or is there more involved?
If you want to keep running the TCI, yes, all you need to do is put a TCI stator and rotor into the points engine. Then you can sell the advance rod and the advance mechanism from the points engine to me.
Rotor and alternator are setup for the TCI and are worth money. You can use them with any points or electronics setup. The little plug off the alternator will not be used.

Put the TCI alternator on the points engine and go "Gonzo" on it with a Suzuki GN 250 e-ignition module. Cheap and easy peasy. Remove the ATM and related pieces.
