Waking up a '73 after 30 years of sitting

When I got my "73 TX I was told that the motor was rebuilt, but it has sat since said rebuild. When I checked the oil there was just a bit on the tip of the dipstick but what was there looked like new oil. I am just wondering when I go to put the bike back together since I have pulled it all apart, should I be double checking that all the internals are good and re-seal and gasket completely or just do an oil change and fire up when I re-assemble?
 
I would at least pull the valve covers and flashlight around in there looking for any signs of rust. Ditto in the IN/EX ports, looking at valve stems.
