Rear Chain Sprocket Bolt Lock Tab Install - Seeking Technique for Scratch-free Result

New to chain-drive bikes and planning some rear sprocket swaps. Wanted to see are there techniques in bending back the locking ears that don't result in scratching the sprocket face.

Building a clean street/show rider and installing new sprocket(s) and looking to install preserving finish.

Past attempts with a center punch/chisel were not successful. I'm sure these guys building these show bike choppers and cafe racers have a process for this.

Was tempted to just try lock washers and Blue loc-tite but was advised as risky with riding the bike - hard on occasion.

Anyone?
 
I keep a few scraps of copper for the soft sort of tap tap tap, and variety of wood scraps. Some hard, some soft. Actually a sort of set, copper, brass, bronze, oak, fir, and walnut since that's what grows 'round here.
