Hello, wondering if somebody can help me... I plan on installing pod air filters on my 1979 xs650 using the stock carburetors. What jets should I use to compensate for the filters?.

I would recommend installing a visu inline fuel filter between your petcock and carbs. You can get them on eBay cheap, make sure you get the 1/4 inch inlet and outlet. I use them on my Big Bear, Radian and V-Max... Will be putting one on my XS650 when I get the carbs cleaned.
