It would be nice to see a real good picture of the combustion chamber. A close up of the compression release area where it has been ground out.
 
The grinding will effect the air flow from the intake tract and might create a hot spot was my thinking. Not claiming to be an expert might not be a problem.

Probe ignition on its way, as well as 'der muede' style oil cooler adaptor from Germany through ebay.
I have a Lockhart cooler.
Also ordered a top yoke and a 'steering damper' style bolt from motolanna Thailand on ebay, as well as some covers from greenstone foundry in the UK.

Spent today sanding and polishing the back wheel.

The holidays have messed up all the build plans, but they'll be over soon.

I'll take some more pics as I go...

I reckon if it was my bike I would get another head. It looks like they may have ground down to the aluminum. The combustion chamber is thin in that area hard to tell from the picture. The valves have been ground down and are sunk into the seat. The head needs to be disassembled and valve guide clearance checked. The valves should be checked for proper margin. I would have installed those at last resort.
