I want a black tach cable for my '73 TX650. Are the later-year black cables the same as my gray cable except for the color?

No ,they are about an inch shorter,assuming your tx is stock.

I'm sure it does. Our early instruments have the cable exiting straight out from the center, needs to curve rearward and down. Later instruments have a downward angled cable connection, doesn't need to be as long...
Get a long piece of black heat shrink tubing. Cut to the length of your cable, slip on and heat to shrink.
That's what I did on my braided steel brake lines. Makes them look like stock lines.
