Engine oil temperature

How hot are these engines supposed to run if everything is good condition and tuned correctly at about 75 to 80 degrees outdoor temperature.
Thinking about installing some sort of temp indicator.
I'm looking for ideas. thanks

There were some temp probe dip sticks floating around at one time or another.

As jetmechmarty has pointed out above the dipstick cap can be modified to take a cooking type temperature probe, a long version of what a chief sticks in a big roast/turkey. The contact for these was DogBunny and here is his thread on the subject:
