How necessary are the air boxes on my 79? Can I just run filters off of the carb? Seems like standard air filter would be a more efficient setup as far as aesthetics and extra space..?

The air boxes keep the crud out of the carbs and if you ditch them you'll still need something to do that.
Yes, pods will work, so long as the pods you choose don't block off the small air intakes around the edge of the big one.
It's also been posted that the cylindrical foam pods work better than the conical pleated pods.
