Front wheel hub direction

The 500 caliper will work, you will just need to change the caliper retainers if you plan on using a 7mm thick disc .....

I can't speak to rear brakes, so maybe you are right with regards to them.

However, with front brakes, what I said holds. This is an SR500 caliper and disc. If you put a 7mm rotor in there, it is probably going to scrape the housing. The U-shaped gap in my pic is wider on an XS650 caliper. The left-side SR500 caliper is a different part number that the XS650 left-side caliper, and this is where the difference is.

I just checked, and the same situation occurs at the rear. The housing gap of an SR500 rear caliper is 2mm narrower than the gap of an XS650.

It’s been noted for years now that many if not all models utilizing 5mm thick discs also utilize caliper hangers with narrower cast gap, and the narrow version on the retainers.
Calipers and pistons seem to be the same but perhaps the narrow retainer is to conform with the narrow disc as the pads wear thin to their useful limit
