Hi Leo,
if any of your XS650s still have the stock "rototiller" handlebars, oh yes, they have to go.
You can see several different handlebars on the MikesXS site or better yet, visit a local bike shop or a local swap meet and see what they have to offer.
Buying handlebars is like buying shoes, you have to try them on to see if they will fit.
The nearest you can get to that without attaching the bars to your bike is to hold the bars in your hands in an approximation of your riding position.
It took me 3 tries to get it right (too high, too low, perfect) But you have 3 bikes so it's not a complete waste of your money.
A true "BratStyle" seat is a semi-solo seat meant to fit on a bike that has the "Bratstyle" lowered seat position modification made to it's frame.
Your reference photos show what I'd call a "cafe racer" seat. There's several companies that make XS650-compatable cafe racer seats.
