I tried checking my compression without using the starter on kicker on my spare engine. The engine doesn't have exhaust or carbs, and is in a stand.

It read 30psi in both cylinders.

I turned it over using a drill. Is this not a quick enough rotation to generate proper compression?

Drill wasn't anywhere near fast enough.

Did it with the starter (and jumper cables from my car) and it did 140 dry, 160 oiled.

Sounds like you have good compression. On my fresh 650 build it got about 165 on the starter, no carbs and full of assembly lube.
The 750 kitted engine about 195 the same way'

Sweet.

How do I keep my spare motor in good condition? Few squirts of Marvel and a few rotations every couple of months?

there is cylinder fog that comes in an aerosol can, for motors that are seasonal, like boat motors.
