I just rebuilt my buddies carbs for his 85 or so yamaha virago xv1000. The bike was gummed up but would start on one cylinder before I took the carbs off. I rebuilt the carbs and set everything back to where it was. Now the bike won't start. It's getting fuel and spark but too much fuel. The spark plugs are covered in gas and it leaks out the exhaust. I left a container to catch the excess under the pipe yesterday and today he said there was about an inch in it! What's going on? Float levels maybe?

Thanks in advance

Does anybody know what the floats are supposed to be set at? Or actually how do you even set these things?

As I have said many times, a repair manual is the most important tool you will ever own.

The method you use is probably the same but the measurement you set them to is probably not. You need to find the specific float height spec for that machine. This being a list for XS650s, you probably won't find that info here (as it should be).
