Hi, among other changes I'd like to fit tracker-type bars on my 82 Heritage Special, but would much prefer to stick to standard cables rather than have clutch/throttle/choke ones made to fit, not least as I don't have the kit to do it myself. This would also make sourcing replacements so much easier.

How wide can I go? Any recommendations, words of warning, or whatever? I'm sure some of you out there must have made similar replacements, so before I go any further I thought I'd ask you folks.

All advice warmly welcomed :)

Thanks chaps, I'll read up but I'm really after wider bars rather than shorter cables.
My modern bike is a Multistrada and something like its Magura bars would be great. Don't want to buy the bars then find my cables are too short though!

I doubt the cables will be too short. The bars you're considering may be wider but they're much lower. That should compensate for the extra width.
