One of the key things I have learned about cafe bikes is that the bottom of the fuel tank and the bottom of the seat should form a straight line and that line should be parallel to the top of the sidecovers. That is why Brassneck wanted to lower the front of his fuel tank an inch or so.
Check it out - the prettiest cafes all have that geometry.
