I'm finally satisfied enough with the bike enough to post an update:
Done:
Head Gasket (which led to rings, rear cam guide, two new valves)
One piece braided brake line
Scrambler style handlebars
Voltmeter
Headlight stone guard
Tail Box (converted an Army First Aid kit with waterproof lid)
Pamco E-Ignition with high output coil kit
RFY Shocks (+1" over stock height)
Progressive fork springs (upped oil to 7 ounces of 15w)
Heidenau K60 tires front and rear
To Do:
Research muffler options, want something a little throatier than the Harley mufflers.
Figure out how to adjust rear brake pedal to get more leverage.

They sound pretty good, but I'd like them to have a deeper/throatier note.
